Traditionally, there are more than 365 different ways to prepare bacalhau, or salt cod, one for each day of the year! Bacalhau is codfish that has been salted and dried in the sun, a method of preservation that allows the cod to be stored indefinitely at ambient temperatures, as no bacteria or mold can grow on the highly salted, dried fish.

Imported by Frank and Sal Italian Market, we insist on only prime filets, which are caught in the North Atlantic and cured in Portugal. Each order is packed by hand and inspected for quality, as we never pre-package anything.

Before consumption, salted fish products must be desalted, a process that can take up to 3 days for the thickest pieces. To achieve the best result, we recommend the following simple guidelines: 1) Rinse the precut portion of codfish under the tap to remove excessive salt. 2) Place the fish in a large bowl of water, using three times as much water as fish, and keep the bowl in cool conditions (43-47°F) throughout the process. 3) Change the water once a day. 4) After 2-3 days, the fish is ready to be cooked, refrigerated, or frozen for future use. Importantly, the desalted cod must be refrigerated.

For a delicious Salt Cod Fritters recipe, you will need: 1/2 pound flaked, reconstituted salt cod; 1 russet potato, peeled and cut into 1-inch chunks; 1/4 cup minced fresh herbs (parsley, chives, basil, etc.); 4 cloves garlic, minced; 1 tablespoon lard or butter; 1 egg, lightly beaten; 1/3 cup flour; 1/4 teaspoon baking powder; salt and black pepper to taste; and oil for frying.

To prepare, pulse the salt cod in a food processor until finely shredded. Boil the potato until tender, then mash it well. Sauté the garlic in the lard or butter, let it cool, and add it to a large bowl with the salt cod and mashed potatoes. Mix in the herbs and flour, then the egg and baking powder. Season with salt and pepper to taste. Chill the mixture in the refrigerator for at least 30 minutes, or up to overnight.

Heat at least 2 inches of oil to 350°F in a heavy pot or deep fryer. Scoop tablespoon-sized balls of the mixture and fry them for about 3 minutes, until golden brown. Transfer the fritters to a rack in a 225°F oven to keep warm while frying the remaining batches.
