Obtained from large fish that can reach almost two meters in length, cod liver is one of the most important commercial fish products. Medical fish oil and canned food are made from its liver, making it a rather expensive product. Cod was recently on the verge of extinction due to uncontrolled fishing, but it is now bred in nurseries, with the main catch still being caught in the Atlantic. Standards have been developed to prevent overfishing.
Cod liver is a concentrator of beneficial fat-soluble vitamins such as A and D, which are often lacking in poor regions with a lack of sunlight and a varied diet. Vitamin D is primarily obtained through synthesis in the skin from exposure to sunlight, so the lack of this substance becomes catastrophic during the long winter months, especially in northern, cold countries.
For preservation, the liver is cleaned, cut, and placed in jars along with salt and pepper, then sterilized, allowing the product to be purchased in this form. Cod liver is often eaten as an independent dish on bread, as its taste is very pronounced, but it can also be added to salads.
Produced from wild-caught Icelandic cod fish, the product contains no preservatives or artificial flavorings. The ingredients are simply cod liver, cod liver oil, and salt, with the product of Iceland being packaged in a 7.1 oz BPA-free can with a pull-top easy-to-open lid. The package displays the production and expiration dates in the European format (DD/MM/YYYY).
After opening, the cod liver should be stored in the refrigerator and consumed within two days. It serves as a rich source of Omega-3 fatty acids, Vitamin D, and Vitamin A, making it a valuable addition to a balanced diet.
